2 large artichokes
4 tablespoons olive oil
4 cloves garlic (finely chopped)
1/2 cup grated parmesan cheese
1 teaspoon lemon zest
1 teaspoon dried oregano
1 teaspoon salt
1/2 teaspoon black pepper
fresh parsley (chopped, for garnish)
lemon wedges (for serving)
Instructions
Preheat your oven to 200°C (400°F). This is important for even roasting.
Prepare the artichokes: Cut off the stems and remove the top part of each artichoke so that the petals are visible. Pull off the small lower leaves.
Cut the artichokes in half lengthwise and scoop out the fuzzy choke inside with a spoon. Be careful not to damage the outer leaves.
In a small bowl, mix together the olive oil, chopped garlic, grated parmesan, lemon zest, oregano, salt, and black pepper until a smooth paste forms.
Generously brush the cut sides of the artichokes with the garlic-parmesan mixture, ensuring the paste gets well into the insides of the artichokes for maximum flavor.
Place the artichokes cut side down on a baking sheet lined with parchment paper. Cover the baking sheet with aluminum foil to retain moisture.
Roast the artichokes in the preheated oven for 25 minutes. The artichokes should be soft and fragrant.
Then remove the foil and roast the artichokes for another 15-20 minutes until they are tender and the tops are golden brown. Be careful not to let them get too dark.
After taking the artichokes out of the oven, let them cool slightly. This enhances the flavor and texture.
Garnish the artichokes with freshly chopped parsley and serve hot with lemon wedges on the side for an extra flavor kick.
